Cheeseburger Casserole with pasta instead of potatoes, we enjoyed this recipe with Garlic Bread and a simple saladIngredients :
1 1/2 Lbs ground beef
1 small diced onion
1/2 tsp salt
1 16oz package penne pasta
3 C shredded Colby-Monterey jack cheese
2/3 C Parmesan cheese
4 Tbsp butter
1/2 C Flour
2 cans diced tomatoes drained
1 Tbsp Worcestershire sauce
2 Tbsp Dijon mustard
2 C Milk
1 1/2 C beef broth
1/2 tsp onion powder
1/2 tsp garlic powder
Green onions or dried chives
Directions :
Brown beef with onion and salt and removed all grease.
In a large pot boil water with salt and cook pasta until slightly Al dente. Drain pasta and leave set aside.
In the pasta pot melt butter and stir in flour to make a roux, cook flour 2 minutes then stir in milk, Dijon mustard, Worcestershire sauce, beef broth, onion powder and garlic powder. Stir and bring to a light boil, stir in drained tomatoes, mix in half the cheese. Turn heat to low and stir in pasta and ground beef. Top with remaining cheese and green onion/chives. Cover and turn off heat. Let casserole sit for a few minutes to melt cheese. You can place in oven at 250 for 10-15 minutes to keep warm.
